Amritsari Kulcha: What is it?

Amritsari Kulcha is a well-known Punjabi cuisine that is particularly prevalent in Amritsar’s streets. This kind of paratha is filled with paneer, potatoes, onions, or a combination of spices. A tandoor is used to cook it. But you may also simply prepare it at home on a pan. Kulcha is unique because of its spicy filling and crispy texture. Typically, it is served with curd raita, onion-tamarind chutney, or chole.

How is Amritsari Kulcha prepared at home?

Making Amritsari Kulcha at home is a pretty simple process if you also want to taste it like Bhagyashree. The components are readily available in the kitchen, and making it doesn’t take much work.

Regarding the dough

  • Four cups of all-purpose flour
  • Three to four tablespoons of curd
  • One teaspoon of baking soda
  • One teaspoon of baking powde
  • One teaspoon of salt
  • One teaspoon of Desi Ghee
  • As required to knead the dough, water
  • Two to three teaspoons of nigella (kalonji) seeds
  • Three to four teaspoons of coriander leaves, cut finely

Regarding the stuffing

  • 250 grams of potatoes, mashed and cooked
  • One onion, chopped finely
  • 3–4 finely chopped green chilies
  • One chopped capsicum (optional)
  • One teaspoon of powdered red chili
  • One teaspoon of garam masala
  • One teaspoon of chat masala
  • One teaspoon of cumin powder
  • One teaspoon powdered coriander
  • Three to four teaspoons of coriander leaves, cut finely
  • Add salt to taste.

Regarding the chutney

  • Overnight soaking of tamarind pulp
  • One onion, chopped finely
  • One teaspoon of black salt
  • One teaspoon of cumin powder
  • One teaspoon of chat masala
  • Two teaspoons of coriander leaves, cut finely
  • One green chili, chopped finely

How is Amritsari Kulcha made?

To begin, place the flour in a large bowl. Mix thoroughly after adding the curd, ghee, baking powder, baking soda, and salt. Now knead a soft dough while gradually adding water. Knead the dough thoroughly for 5 to 7 minutes to keep it soft. Now spread the dough with ghee and cover for two hours.

This is how the stuffing is made.

Mash the boiling potatoes for filling. Add salt, cumin powder, coriander powder, red chilli powder, capsicum, garam masala, chaat masala, finely sliced onion, and green chilies. Finally, make the mixture by adding the finely chopped coriander.

Making Kulcha is simple.

The dough should be kneaded into little balls. Put a tiny ball of potato filling inside each ball after gently rolling it. Roll the ball lightly after closing it. Be careful not to let the stuffing escape. With the aid of water, sprinkle the nigella seeds and green coriander over the kulcha. Gently press to ensure that all of the stuffing adheres. The kulcha should now be placed on a heated pan and cooked until browned. Once cooked, drizzle the kulcha with a little butter or ghee.

How is tamarind-onion chutney made?

Remove the overnight-soaked tamarind pulp and crush it. Mix thoroughly after adding the finely chopped onion, cumin powder, black salt, green chilies, green coriander, and chaat masala. You can now enjoy your spicy chutney. Present the hot Amritsari Kulcha alongside curd raita, onion-tamarind chutney, or chole.
